  • For the Rice:
    • 2 cups Basmati rice, soaked for 30 minutes

    • 2 green cardamoms
    • 1 black cardamom

    • 1 tbsp ghee
    • 2 tbsp vegetable oil
    • Salt to taste
  • For the Egg Masala:
    • 4 hard-boiled eggs, peeled and quartered
    • 2 large onions, thinly sliced
    • 2 green chilies, slit
    • 1 inch ginger, grated
    • 2 cloves garlic, minced
    • 1 tsp turmeric powder
    • 1 tsp red chili powder
    • 1 tsp coriander powder
    • 1/2 tsp garam masala powder
    • 1/4 cup yogurt
    • 1 tbsp tomato puree
    • 1 cup chopped coriander leaves
    • 1/4 cup chopped mint leaves
    • Salt to taste
    • Oil for cooking


  1. Prepare the Rice: Rinse the soaked rice and set aside. Heat ghee and oil in a large pot. Add cloves, cardamoms, cinnamon, and bay leaf. Fry till fragrant. Add drained rice and stir to coat. Pour in enough water to submerge the rice by 1 inch. Add salt and bring to a boil. Cover, reduce heat, and simmer for 15 minutes or until rice is cooked and fluffy.
