Ingredients:

  • For the Rice:
    • 2 cups Basmati rice, soaked for 30 minutes
    • 4 cloves
    • 2 green cardamoms
    • 1 black cardamom
    • 1 cinnamon stick
    • 1 bay leaf
    • 1 tbsp ghee
    • 2 tbsp vegetable oil
    • Salt to taste
  • For the Egg Masala:
    • 4 hard-boiled eggs, peeled and quartered
    • 2 large onions, thinly sliced
    • 2 green chilies, slit
    • 1 inch ginger, grated
    • 2 cloves garlic, minced
    • 1 tsp turmeric powder
    • 1 tsp red chili powder
    • 1 tsp coriander powder
    • 1/2 tsp garam masala powder
    • 1/4 cup yogurt
    • 1 tbsp tomato puree
    • 1 cup chopped coriander leaves
    • 1/4 cup chopped mint leaves
    • Salt to taste
    • Oil for cooking

Instructions:

  1. Prepare the Rice: Rinse the soaked rice and set aside. Heat ghee and oil in a large pot. Add cloves, cardamoms, cinnamon, and bay leaf. Fry till fragrant. Add drained rice and stir to coat. Pour in enough water to submerge the rice by 1 inch. Add salt and bring to a boil. Cover, reduce heat, and simmer for 15 minutes or until rice is cooked and fluffy. Remove from heat and fluff the rice with a fork.
  2. Make the Egg Masala: Heat oil in a pan. Add onions and fry until golden brown. Add green chilies, ginger, and garlic. Saute for a minute. Add turmeric, red chili powder, coriander powder, and garam masala. Stir for 30 seconds.
  3. Add yogurt and tomato puree. Cook until the masala thickens and oil separates. Add chopped coriander and mint leaves. Season with salt.
  4. Gently fold in the cooked rice and quartered eggs. Mix well without breaking the eggs.
  5. Assembly: Garnish with chopped coriander leaves and fried onions (optional). Serve hot with raita or chutney.
