Taste of India: G20 Delegates to Indulge in Regional Delights

Delhi is rolled  out the red carpet for the G20 summit, leaving visiting dignitaries thoroughly impressed with their arrangements. Journalists from various countries have expressed their satisfaction with the event’s organization.

The government has gone to great lengths to showcase India’s rich heritage through splendid decorations. However, what truly sets this G20 culinary experience apart is its focus on vegetarian cuisine, emphasizing coarse grains, locally sourced produce, and fruits.

The highlight of this gastronomic journey is the presentation of regional delicacies, each offering a distinct taste and flavor representing different Indian states. The menu promises a delightful exploration of Indian flavors, including a tour of beloved street foods.

Delegates at the G20 summit will savor a diverse selection of dishes from across India. The menu features traditional delights like Rajasthani dal bati churma, Bihar’s famous litti chokha, Punjabi tadka dal, and South Indian favorites such as Idli, Masala Dosa, and Uttapam. Desserts include Bengali Rasgulla and sweet jalebi.

Indian street food’s worldwide reputation will be on display, with tantalizing options like panipuri, samosa, dahi bhalla, vada pav, bhelpuri, and chaat.

The extensive all-vegetarian meals comprise over 100 traditional and local delicacies. Guests can enjoy items like grilled vegetable salad, vegetable broth, roasted almond and chickpea sundal, subz korma (Andhra Pradesh specialty), paneer lababdar (Uttar Pradesh delicacy), potato lyonnaise, pyaz jeera ki pulao (Punjabi dish), tandoori roti, butter naan, kaju matar makhana, penne in arrabiata sauce, lentil jawar dal tadka (Uttar Pradesh specialty), kulcha, cucumber raita, tamarind and date chutney, mix pickle, and plain curd.

Desserts offer a delightful variety, including walnut and ginger pudding, strawberry ice cream, and black currant ice cream. Other dishes on the menu include ragi idli, kuttu malpua (Uttar Pradesh special), lamb and little millet soup, palm heart, cherry tomatoes, millet nargisi kofta, caramelized onion and cumin millet pulao, kesar pista rasmalai (Odisha special), warm millet pancakes, pearl millet and mixed mesclun, orange quinoa murgh, badam and amaranth korma, wild rice and pearl millet mousse, and little millet kheer.

To ensure the highest hygiene standards, the Delhi Government’s Department of Food Safety has deployed officers for rigorous inspections and monitoring of food preparations. Over 18 food safety officers are collecting raw ingredient samples to ensure top quality. Stringent checks on kitchen cleanliness and staff hygiene are also part of the stringent safety measures. All food items undergo lab tests before preparation or service, ensuring the utmost safety for all guests.
